Today's Recipes and Tomorrow's Eats ...

Hey there! Well, let me get down to business. I see in comments that many of you have looked for the recipes I shared on The Today Show Saturday, but to no avail. My sincere apologies ... sometimes it takes time for recipes to appear on their website, so here goes ...

TODAY'S RECIPES!!!


Chicken Chorizo Patty Melt

Patties:

1 pound ground chicken

6 ounces fresh chorizo

2 cloves garlic, minced

2 tablespoons fresh oregano, chopped

1 teaspoon kosher salt

1 tablespoon vegetable oil

Onions:

1 tablespoon butter

1 tablespoon vegetable oil

1 Vidalia or sweet onion, halved and sliced

kosher salt and freshly ground black pepper

4 tablespoons olive oil

4 flat bread or naan discs

kosher salt and freshly ground black pepper

8 slices jarlsberg or swiss cheese

ketchup, to taste


Begin by making the patties: In a large bowl, gently but thoroughly combine all ingredients. Form into 4 equal-sized thin patties roughly half the size of the naan (nah nah nah naaaan :-P) you will be using for the sandwich (imagine the finished patty on one side of the naan, allowing you to fold the other side of the naan over it to make a sandwich). Cover patties with plastic wrap and refrigerate for 30 minutes.

Meanwhile make the onions: In a pan on medium heat melt butter with oil. Add the onion and season with a pinch of salt and a couple of grinds of pepper. Saute until onions are caramelized, about 20 minutes, set aside.

Preheat grill to medium high heat and brush with 2 tablespoons of oil. Place patties on grill and cook on both sides until cooked through, about 3 minutes per side.


Assemble the sandwiches by brushing the remaining 2 tablespoons of oil on 1 side of each naan. Place them on the grill with the oiled side down and place one slice of jarlsberg cheese on each, only covering one half of the bread. Place a cooked chicken chorizo patty on top of the cheese, then add a mound of onions, another slice of cheese and allow to melt slightly. When the top layer of cheese begins to melt fold over the other half of the naan. Press on the sandwich with a spatula to seal. Serve immediately with a side of ketchup.


Yield: 4 servings


Sunny's Jicama Salsa

1(1 ½ pound) jicama, peeled and diced

1 Granny Smith apple, cored and diced

½ small red onion, peeled and diced

3 tablespoons lime juice

2 tablespoons vegetable oil

1 tablespoon sugar

2 teaspoons hot sauce (recommended: Frank's Red Hot)

1 tablespoon cilantro, chopped

1 tablespoon mint, chopped

kosher salt and freshly ground black pepper


Combine all ingredients in a bowl, seasoning with salt and pepper to taste. Refrigerate for at least one hour before serving. Serve alone as a side salad or with tortilla chips.


Yield: 4 servings


Sunny's Brooklyn Iced Tea

6 ounces lemoncello

3 ounces dark rum

3 ounces tequila

24 ounces bottled sweetened iced tea

ice

lemon slices, to garnish


Pour lemoncello, rum, tequila and tea over ice in a pitcher filled with ice and stir vigorously. To serve pour into ice-filled highball glasses outfitted with a straw and garnished with a lemon slice on the rim.


Yield: 4-6 servings


Red Velvet Swirl Brownies

1 tablespoon butter, for greasing baking pan


Red Velvet Brownie layer:

1 stick unsalted butter

1 cup sugar

1 tsp vanilla

1/4 cup cocoa powder

pinch of salt

1 tablespoon red food coloring

1 teaspoon vinegar

2 eggs

3/4 cup flour

1/4 - 1/2 cup walnuts, gently chopped, (amount is to taste)


Cream Cheese layer:

8 ounces cream cheese

1/4 cup sugar

1 egg

1/8 teaspoon vanilla


Heat oven to 350 degrees.


Butter an 8x8 baking pan, set aside. In a sauce pot on medium heat melt the butter. Remove to a bowl and add sugar, vanilla, cocoa powder, salt, food coloring and vinegar, in that order mixing between additions. Whisk eggs in a small bowl and combine with warm cocoa mix. Fold the flour into the chocolate batter and combine lightly. Add walnuts and pour into prepared baking dish, saving a ¼ cup of batter for the top.

For the cream cheese layer, blend together the cream cheese, sugar, egg and vanilla in a medium bowl. Gently spread cream cheese layer on top of brownie batter in the pan. Dollop remaining brownie batter over the cream cheese layer. Using a skewer or the sharp end of a knife, drag the tip through the cream cheese mixture to create a swirl patter. Bake brownies for 30 minutes. Remove to a cooling rack and allow to cool completely before cutting.


Yield: 8-10 servings

I know you were in the PNW for a former show, but why don't the FN chefs ever come out here for something like the Healthy Food Fight?

We've had Guy do a show at a theater, as well as Anthony Bourdain (I know, he isn't on FN anymore, but he loves the PNW and is here quite often), Tyler was here years ago with his show, but not for the public.

We love to cook out here, have fabulous local produce, meat, and other foodie delights.

We would welcome you!!!!

berrybaby, hey! i love the pac north west! i was just pining for the street food carts in portland, or a week or two ago and bragging to some people about the amber waves of grain in wash. i gotta tell ya, i don't know why events don't travel through your neck of the woods as much. guy and anthony worked with promotors so i'm sure they were able to influence a schedule. this event is not one put together by us hosts, but rather the company. i wonder what decisions went into where the events took place. is aetna healthcare avail in all states? i'll be sure to ask if i get to chat with the right person. i promise if i ever have a chance to make my schedule, i'm comin to the pnw :-). i'm a woman of my word. it may take years for that type of tour to happen, but when it does, i'll be there. ok, have a great wknd! (what's left of it!)

Once we are moved and settled I'm going to definitely try making the Brooklyn Iced Tea. It's so good! Although your Punch from the party is my FAVORITE! I could drink gallons of that.

And I've gotta try making the Chicken Chorizo patty melts. They looked really good.

I tend to go for dessert first as well and for 2 reasons:

1) It's the best part of the meal(depending on where you eat)

2) When you eat dessert first, the initial sugar ingesting sends a signal to your brain as if to say the meal is complete and thus, you will tend to eat less.

The problem I have with number 2 is that when I go for dessert first at a place like Cheddar's, the dessert is freakin' HUGE! It's the chocolate cake and if you saw it, you would understand.

I'm just sayin'...

Thanks so much for posting these, Sunny! Love seeing you on The Today Show. I'm a big follower of your Food Network program so it's always an extra treat to see you in the morning too. Can't wait to try the salad. Oh, and can I just tell you how much of an addiction I have to your Sunny Morning Muffins?? Fantastic!

Thank you Sunny for posting these recipes. I was frantically searching for them on Saturday and was determined to try the patty melts from memory if I had too! I did find the Brooklyn Iced Tea and my husband and I finished off a pitcher. Very refreshing and dangerous.. they kind of creep up on you! Again,thanks for the recipes. Sunny, I don't think the red velvet brownie recipe is correct. I think you might have forgotten an ingrediant. Baking powder maybe? Mine turned out flat as a pancake.

Hey Sunny! Saw your Red Velvet brownies on the Today Show and like some others couldn't find it on their website. I wanted to make them for a cookout I was going to yesterday, so, I improvised with a red velet cake mix. They turned out pretty good, but I'm definitely looking forward to trying your recipe soon as well as the others you posted. Thanks for sharing and keep up the great things you are doing!

So what is the purpose of the vinegar in the Red Velvet swirl brownies? In the cake in acts with the leavening and buttermilk I thought but what does it do in the brownies. Made the brownies today--very good.

kcka7, the dress is a calvin klein from bloomingdale's. i had it altered to fit me better. i'm a 14 and the dress is a 16 so i had it take in a bit at the waist and then turned to a-line dress into a pencil. turned out pretty cool, glad you liked it!! thanks so much for watching!

renae! YAAAAAAY! i have to admit i LOVE those muffins as well. I make several variations of it, but the recipe i shared is my base recipe! glad you like it too!

kotten291, that brooklyn iced tea will put ya to sleep! i was doing my best to follow the same idea of it's long island counterpart: get to the finish line fast! lol. glad you like it! all the ice helps a bit, but it's strong and tasty! hope the patty melt hit the spot tonight!!

helen, it's right! no baking powder. no levening agent needed. these should turn out about 1" - 1.5" thick. funny thing is the today show chef called the night before with the same question and then 30 minutes later called back to say i was right. these aren't cake like brownies, but fudge-like. very dense and creamy. i can't believe yours turned out flat as a pancake! that's less than 1/4" ... did you use an 8x8 pan?? the amount of batter alone along with the cream cheese layer should put you at about 1" before baking.

tracy, only in the south can you find a red velvet cake mix! LOVE IT! i recently visited south carolina for a family reunion and found twinkie-like cakes made of red velvet batter at a gas station! hope you enjoy the recipe and have fun in the kitchen!!

york, pa , the vinegar in the mix works with the ph balance in the cocoa and allows the red food coloring to pop. without it, the color would be muddy. tastes the same without it, but with it the color is prettier. hope this helps and glad the brownies turned out tasty today!!! thanks so much for watching.

Red velvet is one of my ALL TIME FAVES! Despite being a hopeless baker, I may have to give that recipe a try. The kicker is the cream cheese -- just can't beat it!

lindsey, same here. like, i totally don't understand what it is, my grandma has a way with baking and i think from early on, this was it for me. red velvet cake makes me happy.

alissa, you are so right! i always leave nuts out of some recipes for those allergic, then add them mentally after asking questions. forgot to make the change to make it more universal! thanks a bunch for the keen eye! fyi, i say chop, but i prefer to break walnuts into pieces instead, i don't care much for nut-dust and prefer the bigger chunks. hope this helps!!!

I just saw this recipe while I was looking for brownie recipes. Do you think i can mix your cream cheese layer with a double chocolate brownie layer? I love chocolate cakes and my husband loves cheesecake. So, if the chocolate brownie with cream cheese layer works that would be AMAZING!!!
