It's perfect for the lingering cold and easy to make. There are only a few steps to a great stew, then you let it do the work on it's on. If you make it on a Sunday, lunch on Monday is a breeze! Plus it seems rich, but it isn't, 2lbs of chuck (inexpensive) can make about 6-10 servings, just depends on how you dish it up! Then, I clean up all the heavy food with a Strawberry Arugula Salad and a Sweet Lime Vinaigrette. The vinaigrette is my go-to for a quick blitz that tastes great on way more than strawberries and arugula. If you are a salad person, give it a try! It's also great tossed with roasted or boiled potatoes.
